Mum’s creation:

Ingredients

spices:
one large onion thinly sliced
some garlic, thinly sliced
cardamon
1 stick cinnamon
cloves
star anise
one pandan leaf, knotted
paprika powder (good one, ‘hot’ preferable to ’sweet’)

others:
red carrots, shredded
tomatoes, diced
scallops/prawns/meat
button mushrooms (fresh ones, not canned ones), quartered
basnati rice (gives a dryer feel, if use the usual rice, then end result is ‘wetter’, if you use valencia rice, i suppose u get something a bit like paella… haha)

garnishing:
coriander, chopped

1. Place all the spices in a pan with some olive oil (start with garlic… except the paprika) and lightly stir, then add in all the ingredients under ‘others’. stir fry till raw stuffs are almost cooked.

2. Add in the uncooked rice (remember to wash!), add in a sprinkle of paprika powder, +/- a dash of wine for the courageous… (i’m not sure what wine to use), and let it simmer a while.

3. Place everything in the pan (even the pandan leaf) into a rice cooker, add appropriate amount of water and start cooking.

4. Sprinkle over with chopped coriander, remove the pandan leaf and voila!

fast and easy :)

dunno how to describe the product, it feels like a mix of yellow basnati rice + paella… of cuz u can vary the stuff within… can be scallops/prawn/sotong for the seafood feel (heck, you can even add mussels! yum yum), or could be chicken pieces… all the fun in cooking is the variation!
